A Truly New Zealand Yoghurt

As is our want, we were sitting around the Lewis Road Creamery kitchen table, talking about dairy and it occurred to us that no one had yet made a truly ‘New Zealand’ yogurt. These days you often hear of Greek style yogurt, or more recently, ‘Icelandic’ yogurt has been a thing. Why not one that made the most of the world’s finest raw ingredients – New Zealand dairy? Even better, what if we were able to run a young, fresh eye over an ancient food to make it unrivalled in taste and texture? Something that Kiwis could proudly call ‘New Zealand yoghurt’. Anyway, we decided that we should do just that.

We’re first to admit that yogurt isn’t a new thing. But it’s about to be a much better thing. Certainly the basic natural processes that make yogurt haven’t changed. You start with milk, you heat it, you add yogurt cultures, you ferment it, you strain it. The magic of the chemistry is the same as always. But, it’s the nuances within the process that make all the difference - the type of milk you use, how long you ferment. The same basic natural chemistry can produce bland, thin yogurt or luscious thick yogurt, with wonderful, perfectly balanced flavours. And that’s where we come in. We decided we wanted to create a rich and creamy yoghurt made with the world’s best dairy ingredients.

After existing for centuries, we asked ourselves what can we add to yogurt? Simple. The world’s finest base ingredients, the most natural flavourings, our own unique cultures, and time. Lots and lots of time. Our recipe is made with a unique blend of live cultures. After blending our base, we softly fold our yogurt before batching it overnight. Then we hand strain it, the traditional way of course, through cloth to remove whey and sugars. Next we let our mixture ‘soft-pot’ set so that the yogurt can develop and set for two full days. The whole ritual takes us three days, end to end. It takes this amount of time to get the smoothest, creamiest texture and that wonderful glossy finish you want to see.

 

 



New Zealand Yoghurt At Last!

As with all our products, we only settle for first and best. Our supreme in-house flavour expert, and one of the country’s most respected, Michelle Sinclair, lead the team. Her first move was to discover who is the foremost expert on making yogurt in the country to help reach our aim of creating truly New Zealand yogurt.  That search led her to Leeston, a small town outside Christchurch in New Zealand where dairy magic can happen. Here Michelle teamed up with Mr Yogurt. (Not his real name. That’s actually Jim Small). Jim’s experience is unrivalled as he has been learning the mysteries of yogurt over the decades. Like us, Jim is restless. He was more than keen to push the yogurt envelope with us because he could see we were serious about making something truly special.

There is another clear difference. The last thing we wanted to add to the world is another crappy plastic yogurt container. The solution to us was obvious and, like yogurt itself, also centuries old. Glass. Our lovely glass jars look after our yogurt and the planet much better. Not only do they chill yogurt quicker, they are much easier to use, far less messy, the perfect size to hold in your hand and they are re-useable or 100% recyclable.

Apologies to the Greeks, and Iceland. Obviously, what we think is great news may not play out too well with other yogurt makers, but the horizon has shifted. We’ve taken our time but New Zealand Yogurt has arrived, and their world will never be the same.


Simply sensational bespoke flavours.

Natural: Making natural yogurt sounds simple in theory, but making exceptional natural yogurt is extremely hard in reality. It’s about such subtle nuances making incredible differences. We wanted our natural yoghurt to be a step above – because while it may be unsweetened it has to have perfectly balanced notes of sweet and tartness.  And of course the starting point - the quality of milk, is everything. As we use only the finest milk from the home of milk we have a natural (pun-intended) advantage when it comes to taste. The extra time we take also elevates the texture and creaminess to somewhere quite special.

Sweetened With Honey: If you want to sweeten the most natural yoghurt, you need to do it the most beautifully natural way. Honey is the answer. But again, our New Zealand Yogurt would never use just any honey. Ours’ is from premium honey makers ‘J-Friends’. And friends they are indeed, as their honey is a sublime blend of manuka, beechwood and Kamahi. This means the honey flavour is there, but not over stated. We like to say ours is ‘sweetened with honey’, not ‘honey-flavoured’ as so many others are.

Lemon & Juniper: Gin with your yogurt? Well, it’s never too early, as they say. But, to be fair, it’s not actually gin. However, the juniper berry is what gives gin its distinctive flavour and when we combine its naturally piney, resinous taste with zesty lemon in our wonderfully creamy yogurt, well it’s a revolution. Light with just the right amount of zing.

Boysenberry with a hint of Rose: It reads well, and it tastes fabulous. Many makers present a berry yogurt, but again, with our New Zealand Yogurt version of this ever-popular flavouring, the ingredients and care we apply take it to another level. And as well as adding time, we’ve added a hint of the world’s finest rose extract. This extra twist is subtle, but transformational to the delightful taste.
