750ml of Lewis Road Creamery Milk10g Sugar7g Dry Yeast30g Lewis Road Creamery Lightly Salted Butter500g of Flour1 teaspoons of Salt
Tip, to help the crumpets keep their shape scoop the mixture into rings.
Warm the milk (warm to the touch - not hot. Stir in yeast to warm milk then leave it to dissolve.
Mix the remaining dry ingredients together.
Add the wet mixture to the dry and combine well to create a batter type consistency
Leave mixture in a warm dry place for 60-90 minutes or until it has doubled in size. This is what helps create the open texture.
Scoop mixture into a well greased medium to high heat pan with butter. Cook each side for 2-3 minutes or until golden brown.
