Apple Crumble

Ingredients

1.5kg green apples
3/4 cup caster sugar (1/2 cup for apple mixture, 1/4 cup for crumble)
2 tablespoons lemon juice
70g Lewis Road Creamery Unsalted Butter
3/4 cup plain flour

  1. Preheat oven to 200°C
  2. Prep apples by peeling off skin, removing the core & cutting into cubes - roughly 3cm.
  3. Place prepped apples into a pot over a medium heat. Add 1/2 cup of caster sugar and lemon juice, stir to combine.
  4. Pop the lid on the pot to let the mixture mingle & soften the apples. Cook for approximately 5 minutes, or until apples are cooked to your liking. Remove from heat and leave to cool.
  5. While the apples are cooking, let's make the crumble. Combine flour & remaining sugar in a bowl. Cube the butter and add to the bowl. Massage the dry ingredients and butter together with your fingers until it comes together in a crumbly mixture.
  6. Pour the apple mixture into an overproof baking dish & sprinkle the crumble over the top evenly.
  7. Bake in the oven for approximately 25 minutes or until golden on top.
  8. Serve with a generous scoop of Lewis Road Creamery Three Vanillas Ice Cream.
