Creamy Mash Potatoes
8 large potatoes peeled
1 1/2 cups of Lewis Road Creamery Whole Milk
80g Lewis Road Creamery Unsalted butter
1/2 cup Lewis Road Creamery Sour Cream
1/2 teaspoon ground pepper
Cut potatoes in to small cubes and place them in a large pot
Cover the potatoes with cold water and add a pinch of salt. Bring to a boil, then lower the heat and simmer for 12 minutes until potatoes are soft when pierced with a fork. Once cooked drain potatoes and set aside
Heat the Whole Milk and Unsalted Butter in a small pan until hot do not allow for this to boil. Whilst this is heating mash the potatoes.
Mash the hot milk/butter mixture in to the potatoes a little at a time until creamy.
Whisk Sour Cream in and grind pepper and salt to desired taste
Enjoy while hot!
