Hollandaise, Two Ways

Ingredients


Smoked Paprika Hollandaise:

3 Egg yolks

1/4 C Butter

Juice from 1/4 lemon

1 tsp Smoked Paprika

1 tsp Pink Himalayan salt

1 tsp Cracked black pepper

 

Dill & Coconut Hollandaise:

3 Egg yolks

1/4 C Coconut oil, melted

Juice from 1/4 lemon

1 tsp Dill powder

1 tsp Pink Himalayan salt

1 tsp Cracked black pepper

Method


STEP 1

Crack your eggs and separate the yolks. Whisk in a bowl with your lemon juice until thick.

 

STEP 2

Over a double boiler with your water just simmering, add your egg yolk mix to the bowl. You don’t want the eggs to scramble so keep whisking and keep the temperature low.

Take either your melted coconut oil or butter and slowly drizzle into the yolks, constantly whisking as you go. You want a steady stream of liquid. Your mixture should slowly thicken into your hollandaise.

 

STEP 3

Once your Hollandaise has reached perfection, remove from the heat and add in your salt and pepper to season.

 

STEP 4

Depending on your choice of coconut oil or butter, add in your spices/herbs. You can switch it up if you wish. We added smoked paprika to our traditional Hollandaise & dill powder to our dairy free coconut Hollandaise. Stir well to combine.

 

STEP 5

Serve your Hollandaise as all Hollandaise should be served..along side perfectly poached eggs, wilted spinach and some free range crispy bacon. Or Some smoked salmon. The Dill Hollandaise would match this perfectly!

Just keep stored in an air tight jar in your fridge!
