Pikelets with Whipped Cream

Ingredients


3/4 cup of Lewis Road Creamery Comfort Milk (190ml)
1 cup of flour (150g)
1 tsp of baking powder
1/4 tsp of salt
1 egg
1/4 cup of sugar (56g)

Lewis Road Creamery Spreadable Butter
Jam or Syrup of your choice

Method

  • 1

    Sift flour baking powder and salt into a bowl.

    In another bowl, whisk egg and sugar until thick. Add with Lewis Road Creamery Comfort Milk to the sifted ingredients. Mix until smooth.

    Spoon tablespoons of mixture onto a hot buttered griddle or non-stick frying pan. Cook until bubbles start to appear on the surface. Flip pikelets over and cook on the other side until golden.

    Place in a clean tea towel to keep warm while you whip up the cream.

    Pour Lewis Road Creamery Double Cream on to a clean bowl. Whisk away until creamy and thickened.

    Serve with pikelets with whipped cream on top. Delicious served with Lewis Road Creamery Spreadable Butter, Jam or Syrup of your choice.
