Cinnamon Sugar French Toast
4 large eggs
1 ½ cups Lewis Road Creamery Comfort Milk
2 Tbsp bourbon or brandy
2 Tbsp caster sugar
1 tsp vanilla extract
8 thick slices brioche or ciabatta
Lewis Road Creamery butter, for frying
3 Tbsp caster sugar
2 tsp cinnamon
Vanilla Whipped Butter:
100g Lewis Road Creamery butter, softened
1 Tbsp honey
1 tsp vanilla bean paste
In a large a bowl, whisk together eggs, milk, brandy, vanilla and sugar, until combined. Set aside. In a small bowl, whisk together sugar and cinnamon.Heat a knob of butter in a large non-stick fry-pan on medium heat. One at a time, dip the bread into the egg mixture, shaking off excess.
Fry in batches for about 3 minutes each side, until golden and cooked through. Once French toast is cooked, sprinkle over cinnamon sugar. Serve with whipped vanilla butter (recipe below).
Whipped butter: using electric hand-held beaters, beat butter, vanilla and honey together on high speed for about 2 minutes, until pale and creamy.
