Garlic Butter Asparagus
2 x bunches asparagus, ends trimmed
50g Lewis Road Creamery Garlic & Parsley Butter, diced
1/4 cup roasted pine nuts
1/2 lemon, zested & juiced
1 bunch dill, sprigs picked
Preheat your oven to 220°C fan bake.
Toss asparagus on a lined oven tray with a small drizzle of olive oil. Season well with salt and pepper. Scatter diced garlic butter on top. Roast for about 20-25 minutes, until asparagus is tender and starting to brown.
Arrange asparagus on a serving plate. Zest lemon zest over the top, then squeeze over lemon juice. Sprinkle over pine nuts and dill
