Fig & Walnut Butter Board
227g Lewis Road Creamery salted butter
2 Tbsp manuka honey + extra for drizzling
1 tsp vanilla bean paste
Handful of roasted Marlborough walnuts, roughly chopped (must be roasted)
½ tsp dried kawakawa (optional)
½ cup Te Mata dessert figs in syrup, cut in half
Few sprigs fresh thyme, leaves picked
Pinch flaky sea salt
Kumara chips or warm sourdough, for serving
Add butter, honey, and vanilla to a mini food-processor, along with a big pinch of flaky salt. Blitz together for about 1 minute, until smooth and creamy.
Dollop butter over a serving board or platter, then spread out with the back of a spoon. Sprinkle over walnuts and kawakawa (if using). Spoon dessert figs on top, then drizzle over some extra manuka honey. Garnish with some sprigs of thyme and a pinch of flaky salt.
Serve with kumara chips and warm bread.
