Double Cream Tomato Soup
Ingredients
1 tablespoon olive oil
1 tablespoon Lewis Road Creamery 10 Star Butter
1 large onion, chopped
2 cloves garlic, minced
2 can whole tomatoes
4 cups vegetable broth
1/2 cup Lewis Road Creamery Premium Double Cream
Salt and pepper, to taste
Extra cream, chopped basil

In a large pot or saucepan, heat the oil and butter over medium heat.

Add onion and sauté until translucent, then add garlic and cook until fragrant.

Stir in tomatoes and broth, and bring to a boil over high heat.

Reduce heat to low and simmer for 10-15 minutes, then remove from heat. Using an immersion blender, purée the soup until smooth. Return to heat and stir in cream.

Season with salt and pepper to taste. Serve warm, topped with a drizzle of cream and chopped basil. Enjoy!
