Banoffee Cups


280g biscuit of choice
120g Lewis Road unsalted butter

100 g Brown sugar
1 can condensed milk
125g Lewis Road unsalted butter

Cream Filling
1 bottle of Lewis Road Double Cream
5 small bananas
1 tsp vanilla essence

    Combine brown sugar and 30ml of water in a saucepan. Stir until sugar dissolves. Heat until syrup is a deep amber colour. Stir through condensed milk and butter. Continue stirring until sauce thickens. Remove from heat and cool.

    Break the biscuits in a food processor or by hand until finely ground. Pour the melted butter over the crumbs and process again. Keep at room temperature.

    Using an electric mixer, beat the cream and vanilla essence in a large bowl.

    Assembly: Place a layer of biscuit crumbs on the bottom of your cup. Add caramel, layers of banana and cream. Repeat this step until each glass is full!

    Serves 8-10 dessert cups.
