Bread and Butter Pudding

Ingredients


8 cups of slightly stale brioche bread
1 cup of add ins (chocolate chips, raisins)

Egg mix
3 eggs
1 1/12 cups of Lewis Road Creamery Whole Milk
1 cup of Lewis Road Creamery Double Cream
40g of melted Lewis Road Creamery Unsalted Butter
½ cup white sugar
1 tsp cinnamon
2 tsp Queen Vanilla

30 g Lewis Road Creamery Unsalted butter for top pre baking
Dust with icing sugar
Lewis Road Burnt Butter Ice Cream

Method

    Preheat oven to 180.

    Place eggs and remaining egg ingredients in to a bowl and whisk - Set aside to cool to room temperature.

    Add the bread and add ins and mixing slightly till combined - Set aside for 3 minutes to soak.

    Transfer to a baking dish.

  • 5

    Drizzle melted Lewis Road Butter.

  • 6

    Bake for 25-30 minutes.

  • 7

    Top with Lewis Road Burnt Butter Ice Cream.
